If you are relatively time poor in the morning – and let’s face it who isn’t! – then my nutrient-dense chia pudding is for you! Made the night before, all it requires is the toppings, or to be fair, this flavour bomb can be had entirely on its own.
You’ll be getting the best start to your day as this baby is a source of good fats, omega’s, fibre, antioxidants (from the berries) and anti-inflammatory properties to boot. Or it makes for a fantastic dessert!
¼ cup of Chia Seeds
½ cup of mylk (I used Inside Out’s Almond and Coconut blend)
2 tsp of cinnamon
2 tsp of vanilla essence
½ tsp of Goldie from The Powder People
Place chia seeds in a bowl and pour over the milk. Whisk together with a fork to make sure they combine evenly. Add in the cinnamon, vanilla essence and Goldie, and continue to whisk. Once all the ingredients have combined and the chia seeds start to expand, place the mix in the bowl / cup / jar / container, whatever you wish to set it in. Place it in the fridge overnight, or for 2 hours.
Top with your favourite fruits and granola – like my sugar-free granola – and then, enjoy!
