Place all ingredients into a food processor and blitz until they are well combined. The mixture should be a paste-like consistency, with an element of crumble to it. It should mould easily to form the falafel shape.
Taking 1 tbsp of mixture, mould to your desired shape. I've done a quenelle. Shallow fry in coconut oil. You'll need approx. 2-3 tbsp to make 3+ falafels. I tend to place the small pan that I'm using on an angle to create a pool of oil. You will need to discard of the oil after use.
Fry for 30seconds to a minute on each side and remove from the oil. Leave to cool and repeat the process for each falafel.
Serve with salad, roasted veg or any one of my Cooking With Veg recipes, and top with fresh coriander.
