Time: 10-15 minutes
4 tomatoes, chopped
2 cucumbers, chopped
1 red onion, thinly sliced
1 capsicum, thinly sliced
100g goats feta
70g olives, pitted
1 tsp oregano
Generous glug of olive oil, approx 3-4 tbsp
Chop the tomatoes and cucmbers and place in a bowl.
Thinly slice the onion and capsicum and place with tomatoes and cucumber.
Crumbled over feta and toss in the olives.
Sprinkle over oregano and generously coat in olive oil.
Toss together and serve!
