30 mins Serves: 4 GF, DF, VGO Ingredients 1 cup brown rice (or you could use quinoa) 500g pork mince 1 onion 1 red capsicum 6 broccolini 4 stalks of kale 6 white button mushrooms 2 handfuls green beans (maybe 15-20) Olive oil or coconut oil 2 tbsp Tamari (wheat free soy sauce) Bunch of coriander
Rinse brown rice and place in a saucepan. Cover with 2 cups of water (1 part rice, 2 parts water). Bring to the boil, cover and simmer for approx. 25 minutes. Be sure to check your rice as you prepare your other ingredients and stir occasionally
Dice your onion into chunks, it doesn’t have to be very fine as the chunks give more texture and slow down the cooking process so they don’t burn out.
Cut capsicum into 1 cm piece. Start by halving the capsicum, and remove the seeded centre and stalk. Cut each half into 1cm wide strips. From there, you can dice into your 1cm chunks. Set aside
Rinse and cut broccolini into 1in pieces. Don’t throw away any of the stalk – it’s full of nutrients. Set aside
Rinse kale thoroughly; you can put it through a salad spinner if you’d like. Peel away the leafs from the stalk and discard the stalk. It can be quite tough and fibrous - so not very enjoyable. Break the kale by hand into smaller 2-3inch pieces.
Peel and remove the stalk of the mushrooms. No need to rinse if you peel off the outter layer. Slice into 1cm pieces.
Rinse and cut green beans into 1inch pieces – similar to the broccolini
Heat a large size pan, over a medium heat with your oil of choice. Make sure it’s a decent glug as we have a whole lot of veggies going in here!
Add your onion and leave to brown up slightly – this should only take 2-3 minutes.
Add capsicum, broccolini, green beans and mushrooms. Allow to cooking for 10 minutes. Be sure to stir in consistent intervals so that you can get a nice colour on all the veggie and so they cook through evenly.
While your veggies are cooking, in a separate pan, add a glug of oil and allow to heat over a medium heat. Once warm, place your pork mince in the pan. Using a wooden spoon, break up the larger chunks of the mince so it because bite size pieces. Allow to cook through and brown. This should take approx. 5-7 minutes. Season with pepper.
Once your veggies are cooked about 80% of the way through add in your kale. This will wilt down quite quickly. Stir continuously
By now your brown rice should be cooked, as should your pork mince.
Combine all ingredients in your large fry pan. Drizzle over tamari and mix thoroughly.
